Ridiculously Simple Vegetarian Taco Soup

Hello humans!

It’s Thursday again! Best day of the week because dad’s cooking dinner! If you’re familiar with my blog go ahead and skip to the next paragraph but for all of you newbies out there, here is the DL: I am going to be a Stay-At-Home-Dad in a few months. I do not know how to cook. Every Thursday I make a new meal for my wife and post the recipe and share my experience. Some are great, while others are not… looking at you, Vegan Lentil Loaf. Here’s where you come in: You give me a recipe you love, I try to make it, you get a shout out! If I like it, great! If I don’t, I’ll make fun of you! Win win! This week’s recipe is Vegetarian Taco Soup, thank you Leah for the suggestion!

This last weekend was pretty busy. My wife and I had our baby shower on Saturday and my family from Minnesota surprised us and drove the 14 hours down to Indiana! It was amazing and a really fun weekend.

It was Monday when I realized that my wife and I didn’t do our weekly grocery trip… Now, for most people this wouldn’t be a problem… I am not most people.

My wife has never trusted me to go to the grocery store by myself, and it could have something to do with my healthy diet of pizza and sugary cereal or maybe it’s the fact that I hide boxes of Fruit-by-the-Foot at the bottom of the shopping cart. Who knows but she was hesitant when I told her I would go by myself. All that I need is my grocery list, a pen, and a can-do attitude!

So I went to Jay C, our local grocery store, all by myself and boy, was I excited! That is, until I walked in.

Tuesday must be when buses are sent to elderly homes to pick up their residents for their weekly five hour grocery trip. Old people barricaded the isles and blocked entire shelves in hope to find the exact can of beans they were looking for. I’ve always wondered what it would be like to have super human speed, like The Flash. After going into the grocery store midday in the middle of the week, I now know it would be extremely boring. I may move five times faster than grandma and grandpa but I still have to wait for them to slowly pass by one another so I can squeeze by their carts. A lot of people in elderly homes have had their license taken away due to accidents and poor eyesight. Saddened that they are no longer allowed on the roads where they used to be the number one source of frustration, they now exercise their terrible driving skills in their shopping carts with complete disregard for their surroundings. Oh yeah, they see you there, waiting for them to move away from the avocados, but they’re not going anywhere. They will squeeze every  last avocado in the entire store before they let you win. The Flash’s worst enemy in the comics might have been Professor Zoom, but in reality, it would’ve been the elderly.

It was only after an hour I had all eleven items on my list! This may be the easiest recipe I have ever done but when the baby is born, I’m gonna need easy recipes! IMG_2194

Here are the ingredients:

  • 1 cup of lentils
  • 1 8oz can of chilies
  • 2 14.5oz cans of diced tomatoes
  • 1 15oz can of black beans
  • 1 15oz can of corn
  • 6 mini peppers, diced
  • 1/2 cup of diced jalapeno peppers
  • 3 tsp of lime juice
  • 1 32oz carton of chicken or vegetable broth
  • Sour Cream and Cheese

Now you can have everything cook together but this will take more time. Instead I cooked the lentils in the broth first while I chopped the mini peppers. The Chile peppers, black beans, diced tomatoes, corn, broth and jalapenos can go into a pot to boil. I sautéd the peppers in the lime juice.

Once the lentils and peppers are done add them into the pot and let them sit for 20 minutes. IMG_2204Once everything is cooked, just add sour cream and cheese and enjoy!

On a side note, you should serve this with tortilla chips but I forgot to buy them from the store so I ate it with crackers.
